Lemon Snowballs

I love everything lemony : cookies, candy, cake, limoncello... I wanted to try these yummie sweet things for ages. Do not overbake or they will be dry !




Ingredients
50 g almond powder
115 g butter or margarine of good quality
135 g sugar
1 egg
60 ml fresh lemon juice
1 tablespoon lemon zestes
2 g baking powder
1 pinch salt
220 g flour
icing sugar

Preparation
Beat butter, sugar, lemon zestes, baking powder and salt until light and fluffy. Add the egg and make sure everything is well combined. Add lemon juice. Fold in almond powder and then the flour. Wrap the dough in plastic wrap and chill. Roll small balls - dough is sticky - and place them on a bakingsheet covered with parchment paper . Bake for 10-12 minutes in a preheated oven 175°C or until the edges are slightly browned. Let them cool a little and roll them in icing sugar. Store in an airtight container.
