Limoncello (Eng)

This wonderful, refreshing liqueur is easy and fun to make, lovely to drink and to give as a present. I always use alcohol 96° as for a traditional Limoncello and never wodka. In Italy, every family has their own recipe. Let the taste develop for a week, but you can drink it straight after bottling. Serve icecold !





Ingredients
10 untreated lemons
1 liter alcohol 96° for comsumption
800 g sugar
1 liter water

Preparation
Peel the lemons and make sure you only peel the yellow part off, the white part tastes bitter. Put the peel in a glass bowl and pour the alcohol on top. Put the bowl in a dark place for one week and shake it every day. Sieve the alcohol. Bring sugar and water to a boil and let cool down. Pour sirup in the lemonalcohol. I always sieve the liqueur through a coffeefilter to sieve out the fine residue. Bottle your homemade Limoncello in pretty bottles. Optional : print out some nice labels and glue them on the bottles. You can vary the number of lemons, quantity of sugar and water to taste.
